Sautéed Chili Lobster with Mixed Greens

This Caribbean-inspired recipe, created by Alix Saimpha executive chef of Hemingway’s Restaurant & Bar in the Turks & Caicos, highlights the sweet and delicate lobster found locally on the island.

SERVES 2

1 lb fresh South Caicos lobster
1 cup tomato juice
1 red habanero pepper
2 tbsp corn syrup
1 tsp chopped garlic
Salt and pepper to taste
Mixed greens

1. Sauté the tomato juice, habanero pepper, corn syrup and garlic on low heat for 2-3 minutes until creamy consistency.   Add salt and pepper to your liking.

2. Add the diced lobster and let simmer for 1 minute while stirring.  Place the lobster over the mixed greens and serve.
