It’s no secret that here at Islands, we’re partial to rum. And while we’re fans of the typical Irish Coffee recipe, we figured adding rum could only improve it. We were right.
So, to celebrate National Irish Coffee Day on January 25, here’s a new take on the classic drink. Don’t worry, it will still raise your spirits on these cold, dreary nights. (Or cold, dreary mornings — we won’t judge.)

Irish Coffee Riff Drink Recipe
- 1 cup sugar
- 4 cinnamon sticks
- 1 oz. Irish whiskey
- 1 oz. rum
- 3 oz. freshly brewed coffee
In a small saucepan, combine the sugar with the cinnamon sticks and 1 cup of water. Bring to a boil, stirring to dissolve the sugar, and then remove from the heat and let cool completely. Discard the cinnamon sticks and pour the cinnamon simple syrup into a container.
In a warmed coffee mug, combine 1 tablespoon of cinnamon simple syrup with whiskey and rum, and then pour in the coffee. Top with a dollop of whipped cream and dust with ground cinnamon before serving.
