Island Cocktail: The Limoncello LLB

LLB—short for lemon, lime, and bitters, is a popular soft drink available throughout the Caribbean and Australia. Bottled by House of Angostura in Trinidad & Tobago, the drink is widely available in grocery stores or made to order at the bar with lemonade, muddled lime or lime cordial, and angostura bitters. Swapping the lemonade for limoncello makes the drink a bit more fun without changing the refreshing island flavor. This recipe was adapted from a cocktail created by mixologist Philip Duff.

MAKES 1 COCKTAIL

INGREDIENTS

2 lime wedges
1 tsp turbinado sugar
2 oz. Pallini Limoncello
Tonic water
Several dashes Angostura bitters

INSTRUCTIONS

1. Muddle the lime and sugar in the bottom of a highball glass. Fill the glass with ice.

2. Add the limoncello and fill the glass with tonic water. Add 4 or 5 dashes of bitters (or to your taste) and stir. Garnish with another lime wedge, if you wish.

NOTE: For a less sweet drink, omit the turbinado sugar.
